Trojan Grill Barbecue Has The Best BBQ In Southern California

By S. Mathur

Owner Portia Mitchell and Chef Nikki (Nakisha) McFadden started out by seeking crowdfunding for a taco cart. Encouraged by friends who loved their cooking and funded by supporters on Indiegogo, they open their catering service, Trojan Grill Barbecue, in 2014.

"Once we got that cart, the ball was really off and running." they said. "We began to accumulate more equipment, and started learning the ropes of the business that we'd become a part of. It's been three and three quarter years since that all started, and it's been wonderful since the very beginning."

Trojan Grill Barbecue serves all of Los Angeles, Ventura and Orange counties. There are a few things that separate it from the competition.

"One of the things that makes us stand out is that we're young and we're female and we're out here in the BBQ game which is a a male-dominated sport if you will," Mitchell and McFadden said. "We're a couple of girls, city girls at that, who are tackling the science and techniques behind making great BBQ. Here we don't find as many female Pitmasters as you may have other parts of the country, and we also also don't find a lot of really great barbecue restaurants here."

Their official mission is to serve delicious well-seasoned comfort foods that will also appeal to health conscious Californians. The BBQ doesn't follow any one style but takes its inspiration from Texas, Memphis, and Kansas City. The current favorite menu item is the beef brisket.

"It's our number one bestseller, and it's just a hit with ourselves and everyone who has a taste of it!" Mitchell and McFadden said. "We really take our time to focus on proper techniques for trimming a brisket and seasoning the brisket and putting that Touch of Love on it that we think makes it so special. With the combination of the beef, the seasoning and the depth of the smoke oh, it's easy to understand why this has done so well for us."

Clients agree that they do a great job, not just with the beef brisket but all meats, which include ribs, chicken and hot links. The ribs just fall off the bone and the mac and cheese is epic. The special sauce, which is the real test of any BBQ, is delicious. Thanksgiving turkeys and meals are beautifully presented, and it's always a good idea to order extra so you don't run out.

For the future, there are plans to expand into a cafe serving light comfort foods. Mitchell and McFadden also want to start a non-profit organization to help children from less fortunate families.Trojan Grill already does its share for the the community, providing food boxes to those in need in Los Angeles County.
